This role is onsite at our Heaven Hill Bourbon Experience location in Bardstown, KY.
What the Role Is
The Restaurant Manager will be responsible for overseeing daily operations of the bar and kitchen at Five Brothers; including, but not limited to guest satisfaction and management of FOH and BOH team. The Manager will ensure that standards of service are met and create memorable experiences in the restaurant and bar. This position will be responsible for hiring, training and overseeing development of the team.
How You Will Spend Your Time?
- Partner with General Manager and Human Resources, as necessary, to document and resolve employee conflicts, issue progressive discipline measures, mediate where applicable and terminate when necessary
- Review BOH staff punch-ins and punch-outs, and approve/edit timecards weekly
- Supervise operation of Five Brothers to maximize profitability, minimize legal liability, and conform to alcoholic beverage regulations
- Contribute to R&D for menu development and execute seasonal beverage updates for multiple outlets
- Work with Visitor Experience Management and Kitchen Manage to plan activations
- Coordinate with Kitchen Manager on tools or items needed for daily bar/floor operation
- Investigate and resolve complaints concerning beverage/food quality or service
- Enforce sanitary practices for food handling, general cleanliness, and maintenance for department
- Ensure products are being stored properly, labeled and FIFO procedures are being followed
- Create weekly schedules for BOH and FOH, including review of time off requests
- Follow and ensure compliance of all QED policies and standard operating procedures as outlined in Employee Handbook
- Oversee and manage labor vs sales for all staff
- Work to continuously improve cost control measures relating to the beverage program by monitoring purchasing procedures, ensuring accurate inventory when placing orders, reviewing sale of menu items weekly and managing deadstock items already in house
- Guide and participate in beverage and kitchen inventory each month and ensure accurate counting and data entry
- Coordinate with Bar Manager to ensure beverage inventory is merged, complete and turned in on time; back stock should be appropriate
- Coordinate monthly beverage education and training with Bar Manager
- Develop food/beverage training for staff on menu items, new product and refreshing knowledge
- Maintain real time tracking of beverage costs via invoice and sales entry
- Work with integrity to provide the best product, services and overall experience for the guests
- Adhere to, and be a leader, for Heaven Hill policies and procedures
- Act as a role model to all team members at Five Brothers
- Work to facilitate open and regular communication with the managerial team members about department updates and challenges
Who You Are…
- Bachelor’s degree or equivalent experience required
- 3-5 years’ experience in the food and beverage industry required
- Basic math and measurement proficiency
- Demonstrate flexible and efficient time management, with an ability to prioritize workload
- English written/verbal communication skills
- Ability to represent the company and communicate professionally and effectively with people internally and externally
- Knowledge of principles and processes for providing customer and personal services
- Knowledge of administrative and clerical procedures
Valued but not Required Skills and Experience:
- Previous experience in food and beverage management, including high volume establishments and experience with craft cocktail programs
- Proficiency in Microsoft Word, and Excel
Physical Requirements
While performing duties of job, employee is occasionally required to stand; walk; use hands and fingers to handle, or feel objects, and use of computer; reach with hands and arms. Employee must occasionally lift and/or move up to 20 pounds.
- Ability to bend at the waist to clean restaurant equipment
- Ability list items/team lift items and heavy boxes
- Ability to bend down to pick up trash, towels, etc.
- Ability to perform restaurant cleaning functions including dusting, sweeping, mopping, scrubbing, etc., as needed
