This role is full time on site at our Heaven Hill Bourbon Experience location in Bardstown, KY.
What the Role Is
The Kitchen Manager will be responsible for the oversight of the culinary and BOH teams, as well as providing direction of all areas of daily culinary operations under the guidance of the General Manager and Visitor Experience management. The Manager will be responsible for ensuring maximum productivity, consistency, profitability, and quality through effective planning, assistance with labor and purchasing, budgeting, price negotiations, menu pricing, employee training, loss prevention, product research, execution and analysis.
How You Will Spend Your Time?
- Work in tandem with the General Manager to execute the mission and goal of the company
- Oversee, train, and develop all kitchen employees
- Strong financial acumen in controlling costs and generating revenue
- Consistently communicate with General Manager and Visitor Experience management at al times while working towards the common goal of creating the best experience possible for guests
- Use provided tools to analyze business patterns and sales history to guide management in business decisions
- Work with General Manager to interview, hire, train and educate all new BOH team members
- Partner with General Manager and Human Resources, as necessary, to document and resolve employee conflicts, issue progressive discipline measures, mediate where applicable and terminate when necessary
- Review BOH staff punch-ins and punch-outs, and approve/edit timecards weekly
- Ensure all food items are consistently prepared using standard recipes while maintaining portion control and minimizing waste
- Monitor purchasing and receiving procedures for products and supplies to ensure proper quantity, quality and price for all purchases
- Ensure that all recipes, product yields, and waste are accurately costed and reviewed each period, and that the information is properly entered into the appropriate database
- Ensure all kitchens, prep areas, reach-ins, equipment and walk-ins are kept clean, organized, and maintained properly in accordance with Company policies and Department of Health regulations
- Verify that food storage, food safety, sanitation procedures, and loss prevention measures meet or exceed local regulations and standards established by the company to ensure staff, guests, and restaurants are protected
- Educate staff on food allergies and dietary restrictions, and help eliminate instances of and opportunities for cross contamination
- Train to maintain compliance with local safety and health ordinance regulations including ensuring safe work practices of all staff, including compliance with company and departmental safety rules and regulations, and the proper use of handling of all relevant equipment
- Work with other managers to implement and monitor sanitation and cleaning procedures, water filter replacements and refrigeration temperature logging
- Complete inventory accurately, update and maintain inventory sheets, and submit complete inventory in accordance with corresponding deadlines
- Place all food and chemical orders, as required, based on forecasting of needs resulting from analysis of product mix reports, introduction of new dishes, large parties, events, etc.
- Maintain excellent relationships with all vendors
- Liaison with farmers, local producers, and aggregators to make suggestions on more local and sustainable purchasing strategies
- Stay current and maintain proper knowledge of requirements, protocol and steps necessary of Health Department inspections
- Working knowledge and ability to execute all kitchen recipes, ability to properly record and write recipes as per instruction
- Ability to execute all positions on the line and assist as needed
- Execute and oversee the production of all menu items
- Expedite orders correctly and efficiently to ensure smooth kitchen flow
- Effectively schedule and communicate to team regarding necessary service needs throughout each shift for each station
- Oversee the review and tasting of meals prepared by line cooks, prep cooks, production cooks and butcher to ensure quality
- Work with integrity to provide the best product, services and overall experience for the guests
- Adhere to, and be a leader, for Heaven Hill policies and procedures
- Act as a role model to all team members at Five Brothers
- Work to facilitate open and regular communication with the managerial team members about department updates and challenges
Who You Are…
- Culinary Degree or equivalent experience
- 2-5 years’ experience working in upscale/fine dining independent restaurants in a similar role
- Basic math and measurement proficiency
- Demonstrate flexible and efficient time management, with an ability to prioritize workload
- Maintain professional demeanor and appearance to lead the team in situations that require strategic thought and problem-solving tactics
- Ability to pay attention to details, handle multiple tasks at once, and show a high level of patience
- English written/verbal communication skills
- Ability to represent the company and communicate professionally and effectively with people internally and externally
- Knowledge of principles and processes for providing customer and personal services
Valued but not Required Skills and Experience:
- Previous experience in food and beverage management, including high volume establishments and experience with craft cocktail programs
- Proficiency in Microsoft Word, and Excel
Physical Requirements
While performing duties of job, employee is occasionally required to stand; walk; use hands and fingers to handle, or feel objects, and use of computer; reach with hands and arms. Employee must occasionally lift and/or move up to 20 pounds.
- Ability to bend at the waist to clean restaurant equipment
- Ability list items/team lift items and heavy boxes
- Ability to bend down to pick up trash, towels, etc.
- Ability to perform restaurant cleaning functions including dusting, sweeping, mopping, scrubbing, etc., as needed
